Extraction:  (n.) the art of getting coffee into your coffee.

When water hits coffee, it immediately starts to break it down, pulling out particles that dissolve into the water. This is called extraction, and it’s thanks to this process that your water ends up with any coffee in it at all. Everything from grind size, to water temperature, to brewing time can affect this process and even slight changes in extraction can make huge changes in flavor.
