Here is a sandwich made on a wide piece of rustic bread – or what we at La Colombe call a “slab-wich.”

Inspiration: The late night specialties of our dual citizenship cities: French onion soup, eaten in the early hours of the Parisian morning by the market workers at Les Halles, and the late night cheesesteaks that drunk Philadelphians know so well.

We covered a slab of lightly toasted bread with caramelized onions, deglazed with sherry, laid out some folded thinly sliced Prosciutto Cotto, and poured on a fancy “Wiz” topping out of Gruyere and Cheddar, which got even more bubbly and melted under the broiler. Some people would call that fondue.
