Miso-Soup-Pics-6

Experimenting with the versatility of our Tea & Tisane collection, led us to this delicious miso soup recipe. With notes of roasted barley and sesame, our Hojicha Green Tea adds an earthy depth to this simple take on miso soup. Warm up these last few days of winter and give it a taste!

Ingredients:

  • 3 La Colombe Hojicha green tea sachets
  • 1¼ cups water
  • 1 scallion (green onion), thinly sliced
  • 2oz firm tofu, cut into ¼ inch cubes
  • 2 tablespoons white miso paste

Heat water to 180 degrees. Place the hojicha green tea sachets in a measuring cup (that can hold 2 cups liquid) and pour heated water over the sachets. Steep the tea for 4 minutes. Remove the hojicha green tea sachets and pour steeped tea into a small pot. (note: reserve tea sachets for additional steeps to enjoy after your soup: simply place one sachet in 8oz water heated to 180 degrees and steep for 5 minutes).

Heat tea broth over medium heat until it begins to simmer. Add the thinly sliced scallions to the tea broth. Gently add each piece of tofu one at a time (to prevent them from breaking apart). Simmer the tofu and scallions for 1 minute, and then turn off the heat.

Add the miso paste to the measuring cup (that you used to steep the tea), spoon in enough of the warm tea broth to make a thin paste, and stir until the miso paste is completely dissolved. Gently stir the dissolved miso broth back into the pot (being careful not to break up the tofu). Serve immediately and enjoy!
